Chop the red pepper, carrots, small potatoes and onion into small pieces.
Liberally salt the chuck roast, then sear it on all sides – do not cook it all the way through.
Place the chopped ingredients into a crockpot.
Pour in both cans of beef broth.
Pour in the tomato paste.
Stir in the seasonings, about ½ tsp. for each (or more, if desired).
Place the seared chuck roast on top; cook for 5 ½ hours on high.
Pour in the can of peas and cook for 1 more hour or until the meat is tender.
Ladle into a bowl.
Serve with crackers or biscuits, if desired.
