A meal that can be tailored to your preferences! Best time to enjoy: For lunch or dinner
Cut the onions into small pieces.
Season the lean ground beef with salt and pepper.
Cut the russet potatoes into medium-sized pieces.
Place the potatoes in boiling water until soft. When soft, pour out *most* of the boiling liquid. Leave some water in the pan and use it to mash. At this point, feel free to add any fixin's you want to the potatoes, like butter, milk, garlic, etc. I mash mine plain with a tad of salt.
Let the mashed potatoes sit off the hot stove while you proceed to cook the meat.
Put a dash of olive oil in pan, add all the onions, and stir until translucent. Add the lean ground beef and break into pieces while cooking. Make sure that it is seasoned with salt and pepper. When meat is almost cooked through, add the whole can of tomato paste.
Stir mixture until combined. Then add the can of peas and corn and mix. Then add the bag of spinach. Mix well.
Turn off the stove and let sit.
Get large baking dish(es) and place the mixture of meat and veggies in the dish and smooth out.
Make sure to leave room for the potatoes to be smoothed on top.
Spread the mashed potatoes on top of mixture in baking dish.
Add cheese to the top, if desired.
Put in oven for ~40 minutes at 350 degrees.
Cut into segments and serve!
Please note: If you are an expert multi-tasker, cook the potatoes and the meat and veggie mixture at the same time (in different cooking vessels).
