Seasonal Veggie & Ham Quiche
A satisfying meal taken from morning to night by adding a variety of seasonal fresh vegetables to this crustless delight. (Rhyming champ!) Best time to enjoy: Morning or night
Ingredients
- 12 Eggs (large) $3.00
- 1 pack Mushrooms (pre-cut) $3.00
- 1 Red bell pepper $1.50
- 1 bunch Spinach $2.00
- 1 Zucchini $1.50
- 1 Onion $1.25
- 1 small package Ham (sliced) $5.00
- 1 small bottle Half and Half (or milk) $2.00
- 1 cup Cheddar Cheese (shredded $3.50

Instructions
Prep:

Chop the red pepper, zucchini, and onion into small pieces.
Chop the ham into small pieces.
Place the chopped ingredients, plus the pre-cut mushrooms, spinach, and ham into a skillet and slightly pre-cook the ingredients until they have reduced. It should be about 10 minutes.
Cooking:

Beat 12 eggs in a rectangular casserole dish.
Add 1/2 cup of half and half (or milk) to the dish; mix well.
Pour the pre-cooked skillet ingredients into the dish with the mixed eggs.
Add salt and pepper; mix well.
Stir in 1 cup of shredded cheddar cheese.
Bake at 400 degrees for 40 minutes.
Serving
